Cajun Teriyaki Chicken Sandwiches

We had these sandwiches last evening & they were delicious! My dh found this recipe for me & printed it. It has only been in my 'to be cooked' stack for about a month. I didn't know the origional source on-line for this recipe because I think he got it from one of the MS forums. I did google it, & it came up as a George Foreman Recipe.

Cajun Teriyaki Chicken Sandwiches
2 skinless, boneless chicken breasts
8 slices cooked bacon
4 slices cheese (any type)
4 leaves of lettuce
1 cup roasted red bell pepper, cut into thin strips
4 tbsps teriyaki sauce
4 tsps Cajun seasoning
4 sets of toasted buns

Pound chicken beasts to about 1 inch thickness. Cut into 2 equal pieces.Rub chicken with Cajun seasoning and place on a medium hot grill. Grill forabout 5 to 6 minutes or until done. Brush with teriyaki sauce and remove from grill. Assemble sandwiches with 1 chicken piece, two strips of bacon, 1 slicecheese, lettuce and 1/4 cup of roasted bell peppers.Serves: 4

This recipe is a KEEPER! We all loved it. I did use 3 large boneless, skinless chicken breasts, & I cut them in half to make 6 sandwiches. I also forgot to buy lettuce & the sandwich was fine without it. I also *splurged* & purchased a bottle of roasted red peppers. Oh my, DELICIOUS! I've had roasted peppers before (they are delicious stuffed), but I had never put them on a sandwich. It was really REALLY good! I look forward to doing this with our green peppers next summer.
I put pepper jack cheese on half the sandwiches & monterery jack on the rest.
Also, I didn't grill them, it's too frigid here right now! I just cooked them on the stove in a little olive oil.
This is a little silly, but I must say that this frosty mug of root beer washed it all down beautifully. :)

Meatball Sandwich

Look at this meatball sandwich!!! YUM!

I love to find new recipes that are KEEPERS, & I love to find new food blogs to follow. I found both with this meatball sandwich. I found this at For the Love of Cooking. Pam takes the most beautiful pictures of food that I think I have ever seen! Plus, her food doesn't just look good, it tastes good. Here is the link to her Meatball Sandwich. There is no way that my picture even comes close to doing this sandwich justice. Y'all have to know that I am not a photographer. LOL So please go look at Pam's. :)


Meatball Sandwich from Pam at For the Love of Cooking
Mushroom Marinara:
2 tsp olive oil
1/2 sweet yellow onion, diced
6 oz of button or cremini mushrooms, sliced thinly
3-4 cloves of garlic, chopped finely
1 28 oz can of crushed tomatoes
1 15 oz can of tomato sauce
1 tsp balsamic vinegar
1 tbsp fresh parsley, chopped
1 tsp dried basil
1 tsp dried oregano
1 tsp fennel seeds, crushed
1 tsp white sugar
1 pinch of red pepper flakes
Sea salt and fresh cracked pepper to taste
Heat the olive oil in a dutch oven over medium heat. Add the onions and mushrooms and saute until tender; add the garlic and cook for 60 seconds, stirring frequently. Add the remaining ingredients. Simmer for at least 2 hours. (This made the house smell AMAZING.)

Meatballs:
1 lb lean ground beef (I used 93/7)
7 button mushrooms, diced finely
1/4 sweet yellow onion, diced finely
1/4 cup of Italian style breadcrumbs
1 clove of garlic, minced
1 egg
1 tbsp fresh basil, chopped
1/2 tbsp fresh parsley, chopped
1/2 tsp fennel seed, crushed
Sea salt and fresh cracked black pepper
1 tsp olive oil (for cooking)
Put the onions, garlic and mushrooms in a food processor to chop, otherwise chop them as small as you can. Combine all ingredients (except for olive oil) together gently. Form into small meatballs and set aside. Once the meatballs are prepared. Heat a skillet over medium heat with 1 tsp olive oil. Cook the meatballs until golden brown on all sides. Remove from skillet and place the cooked meatballs in the mushroom marinara.
Hoagie rolls
Mozzarella cheese, shredded
Parmesan cheese, shredded
Fresh basil, chopped
To assemble, place meatballs with some sauce in the hoagie rolls. Sprinkle the top with mozzarella and Parmesan. Place in a pan, under the broiler and melt cheese - watch carefully so don't burn. Top with basil and serve. Enjoy!

Garden Pita

This is one of my favorite things to have for lunch in the summer.
First I head out to the garden & pick some radishes & green onions.
I wash & slice & add them to pita bread with either ranch dressing or my favorite cucumber sauce. This time I also added mild pepper rings from the frig. These peppers are store bought, but we do grow banana peppers & I'd love to find a recipe & can our own.

Shortly after taking this next picture, I folded it & ate it! YUM!

Now that the herb garden is really producing, it might be good to add some chopped parsley or cilantro, or maybe even some basil or dill. Oh, dill would be good with that cucumber sauce!

Creamy Sausage Sandwich

This recipe came out of this month's Taste of Home Magazine. It is actually called Hearty Sausage Sandwich & is shown on page 30 of the April/May 2008 issue. On account of a few things, I have changed the name. 1st, I can't find it listed on their site in order to link this recipe back to them. 2nd, this recipe is way more creamy than it is hearty, in my humble opinion. And 3rd, I did change the recipe a bit, so I feel like I can call it mine & change the name. LOL! The origional recipe called for a large loaf of unsliced Italian bread & I used deli-style sub buns. It also needed more than the 1/4 t. of oregano & the 1/4 c. chopped mushrooms that it called for, so those were my changes. But I do want to give full credit to Taste of Home Magazine for this recipe. :) Here's a picture of all the sandwiches straight out of the oven:
Creamy Sausage Sandwich
1 pound bulk italian sausage
1 medium onion, chopped
1 small green pepper, chopped
2 garlic cloves, minced
1 package (8 ounces) cream cheese, cubed
1/2 to 1 cup fresh mushrooms, chopped
1/4 c. grated parmesan cheese
1/4 c. water
1/2 t. (or more to taste) dried oregano
6 deli-style buns
1 1/2 c. shredded mozzarella cheese
In a large skillet, cook the sausage, onion, green pepper, & garlic until done & no longer pink; drain & return to pan. Add the cream cheese, mushrooms, parmesan cheese, water, & oregano.
Cook & stir until cheese is melted.
Open the 6 deli-buns. Spread shredded mozzarella cheese on each. Then spread a generous helping of cheesy sausage mixture, & then top with a little more mozzarella. Try to close the buns. (lol)
Place on baking sheet & bake at 375 for 15 minutes or until cheese is melted. You could use a large loaf of Italian bread & make one large sandwich & cut into serving size sandwiches.
This was a hit with everyone! It really was good. And creamy! After typing this recipe, I also see that it could be called Three Cheese Sausage Sandwich!
Whatever the name, it's a keeper.

Polish Sausage Sandwich

This is a really simple sandwich to make. But it is so good!
Butter some deli-style subs & toast them up in the oven.
Cook the polish sausage & in a skillet saute green peppers, onion, & garlic in some olive oil.
Pile onto the bread & enjoy.
I usually make big oven fries with this, but last evening we had sliced pickled beets.
Pretty tasty!


On a side note:
Our computer crashed a couple weeks ago, so we lost ALL of our pictures. Thankfully we had emailed some of our Christmas pictures & both our kids' birthday pictures to family so those got rescued. :) I did have quite a few food pics on there too so I'll be playing catch-up for a while.

STROGIE HOAGIE

1st off- I can't figure out how to spell hoagie. LOL
Basically, this is beef stroganoff on a bun, without the noodles. And it is GOOD.
I saw it on Rachel Ray's 30 Minute Meals last month. All through the show she called it "Strogie Hoagie", but on her site, the recipe on-line is called" Sliced Steak Stroganoff in French Bread". I only made a few changes to her recipe that is found here. Instead of using baguettes, I just used deli style buns & I buttered them & toasted them in the oven. I also added a splash or so of worcestershire sauce & a can of drained mushrooms. And I didn't use watercress.

And here it is on the plate, served with a simple tomato & cucumber salad.

How did this taste?

Tomato Sandwich


This is probably my favorite sandwich. It's a must have in the summer.
And easy.
2 slices of bread, mayo, garden tomato (NOT store bought), & salt.
I can probably eat this for lunch for the rest of the summer & never get tired of it.
I like veggie sandwiches. I also like to eat radish sandwiches & sweet onion sandwiches. Although I use butter on those. My dad got me started on these sandwiches when I was just a youngin'.
This was my first tomato sandwich of the summer. It was so delicious. It was like a treat, like a reward after all of yesterday's hard work on the corn.
And yes, I did eat my lunch off the tonka truck plate today. LOL

Chili Cheeseburgers

Here is a little bit of magic in a can:

Really, I was never a chili cheeseburger type of gal.
I am now. :)
We also add a little worce sauce & some liquid smoke to our hamburger. Makes it taste just like an expensive hamburger you'd get in a steak house.
I usually put ketchup & mustard on my hamburgers. But not if we're opening a can of chili! lol
I like a thick slice of onion, then the cheeseburger, big spoonful of chili, & a mess 'o pickles.
And we like to butter the bun with garlic butter & toast on the grill.

I can no long find Steak & Shake Chili in a can since the e-coli scare last year.
But any chili will work.
